eggplants 2 pcs
water 3 tbsp
soy sauce 1 tsp
sugar 1 tsp
xo sauce 2 tbsp
Cut eggplants into strips and dimidiate the strips. Add 1 cup of oil to wok and deep-fry eggplants. After eggplants becoming soft, take them out of wok.
Leave 1 T. oil in wok. Add seasoning to wok and cook them to be brown sauce.
Add eggplants to wok and fry with low heat. Fry until the XO sauce is dried. Ready to serve.
