豬肝扒菜心
Ingredients
pig's liver 8 oz
choi-sum 10 oz
ginger 3 slices
cloves sliced shallot 2 pcs
Seasonings 1.
light soy 1 tsp
ginger 1 tsp
wine 2 tsp
sesame oil pinch
sugar pinch
Seasonings 2.
salt pinch
sugar pinch
light soy 1 tsp
dark soy 1 tsp
cornflour pinch
water 2 tbsp
Method
Wash and slice pig's liver. Marinade for 20 minutes. Scald in warm oil until cooked. Remove and Drain.
Rinse and drain choi-sum. sectioned.
Heat 1 T. oil and saute choi-sum. Fry until well-done. Arrange on the dish.
Heat wok. Saute sliced ginger and shallot with 1 tbsp oil until fragrant. Pour in pig's liver. Fly briefly for a while. Add in seasonings (2). Stir well. Pour onto choi-sum. Serve.
