Fried Choi-Sum with Pig's Liver

Ingredients

  • pig's liver 8 oz

  • choi-sum 10 oz

  • ginger 3 slices

  • cloves sliced shallot 2 pcs

Seasonings 1.

  • light soy 1 tsp

  • ginger 1 tsp

  • wine 2 tsp

  • sesame oil pinch

  • sugar pinch

Seasonings 2.

  • salt pinch

  • sugar pinch

  • light soy 1 tsp

  • dark soy 1 tsp

  • cornflour pinch

  • water 2 tbsp

Method

  1. Wash and slice pig's liver. Marinade for 20 minutes. Scald in warm oil until cooked. Remove and Drain.

  2. Rinse and drain choi-sum. sectioned.

  3. Heat 1 T. oil and saute choi-sum. Fry until well-done. Arrange on the dish.

  4. Heat wok. Saute sliced ginger and shallot with 1 tbsp oil until fragrant. Pour in pig's liver. Fly briefly for a while. Add in seasonings (2). Stir well. Pour onto choi-sum. Serve.
