Steamed Fish Head with Preserved Vegetable

Ingredients

  • big fish head 1 pc

  • preserved vegetable 1 stalk

  • shredded ginger 1 tbsp

  • diced spring onion 1 stalk

Seasonings

1.

  • wine 1 tsp

  • pepper pinch

2.

  • light soy 1 tsp

  • sugar 1/2 tsp

  • cornflour 1/2 tsp

  • sesame oil pinch

  • wine 1 tsp

  • oil 1 tbsp

Method

  1. Remove the gills of fish head. Rinse and wipe dry. Cut into small pieces. Mix with shredded ginger. Marinate with seasonings(1) for 20 minutes.

  2. Soak and wash preserved vegetable. Squeeze dry and dice. Marinated with seasonings (2). Pour them over the fish.

  3. Steam fish head over water for 8 minutes till done. Remove and Sprinkle with 2 tbsps boiling oil and diced spring onion. serve hot.
