Shark's Fin In Casserole

  • 1.2kg Soaked Shark's Fin

  • 1 Old Chicken

  • 600g Pork Ribs

  • 120g Ham

  • 8 slices Ginger

  • 4 stalks Spring Onion


  • 2 tablespoons oyster sauce

  • 1/2 teaspoon salt

  • 2 teaspoons cornflour

  • 2 teaspoons Hau Diao

  1. Boneless the soaked shark's Fin. Soak in hot water for a while. Wash the chicken and the pork ribs clean. Soak in hot water for a while and wash. Wash the garlic then slice. Crush the onion. Remove the skin of ham which has unpleasant smell. Wash.

  2. Pour in dash of oil in the preheated wok. Saute the garlic and onion until fragrant. Put in the pork ribs and chicken then stir-fry briefly. Pour in one tablespoon of Hau Diao. Put in the ham. Add in water and bring to the boil.

  3. Put in the shark's fin then cook for 6 hours. If the shark's fin is tender, scoop out. Otherwise, cook for another 2 hours to soft, then scoop out. Leave the shark's fin sauce. Season.

  4. Bring back the shark's fin and cook until taste good. Use cornflour and water to make cornflour solution. Dish.
