椒鹽骨
Ingredients
spare rbis 15 oz
spring onion(diced) 1 stalk
mashed ginger 1 tbsp.
mashed garlic 1 tbsp.
Seasonings
light soy 1 tbsp.
sugar 1/2 tsp.
pepper pinch
whisked egg 1/2 tbsp.
Ingredients for spiced salt mixing
salt 1/2 tbsp.
xanthoxylon seeds 1 tsp.
Method
Rinse spare ribs and drain. Marinate with seasonings for about 20 minutes.
Mix marinated spare ribs with 1 1/2 tbsp cornflour. Heat oil intensively and deep fry spare ribs for about 5 minutes. Then turn to low heat and soak until spareribs turn golden brown. Dish up and drain.
Saute a dash of sesame oil, 1/2 tsp sugar, diced onion, mashed ginger, mashed garlic. Put in fried spare ribs, stir well. Dish up and serve with spiced salt.
