Steamed Egg Plants with Minced Pork

Ingredients

  • ground pork 5 oz

  • eggplant 10 oz

  • scallion 1 stalk

Sauce

  • light soy 2 tbsp

  • boiling oil 2 tbsp

Seasonings

  • light soy 1/2 tsp

  • sugar 1/2 tsp

  • cornflour 1 tsp

  • sesame oil pinch

  • pepper pinch

Method

  1. Ground pork marinate with seasonings.

  2. Rinse egg plants. Cut into long shreds and arrange on plate. Place marinated ground pork on egg plants.

  3. Simmer for 15 minutes. Sprinkle with shredded scallion. Add in sauce and serve.
