Soybean and Ribs Soup

Ingredients

  • soybeans 5 oz

  • ribs 15 oz

  • spring onion 1 stalk

Method

  1. Rinse soybeans, soak in water for 2 hour, then drain. Chop spring onion.

  2. Blanch pork ribs to remove blood, remove and rinse under water, and then boil in 6c. fresh water for 1 hour to make stock.

  3. Cook soybeans in the stock till soft. Add salt to taste and sprinkle on chopped spring onion to serve.
