chayote 1.4 lb
dried octopus 2 oz
spare ribs 1 lb
ginger 2 slices
candied dates 5 pcs
Soak dried octopus until tender. Wash.
Wash spare ribs. Scald. Rinse candied dates.
Peel chayote, discard the seed and cut into pieces.
Bring 12 cups of water to the boil. Put in chayote, octopus, Spare ribs and ginger. Parboil over high heat for 10 minutes. Turn to low heat and continue to parboil or 2 1/2 hours. Season with salt. Serve.
