young wax gourd 1 pc
ginger 2 slices
salt 1/2 tsp
Halve big fish head. Clean and wipe dry. Add marinade ingredients and mix well.
Soak beancurd in water.
Peel young wax gourd and cut into large pieces.
Heat wok and add ginger. Fry fish head for a while. Dish up fish head and ginger.
Bring 4 cups of water to the boil. Put in big fish head, beancurd, young wax gourd and ginger. Boil again. Parboil over medium heat until cooked. Season with salt. Serve.
