Red Vinegar and Shallot Dressing

  • 2 chopped shallots
  • 5 tbsp red wine vinegar
  • Mix together to serve with oysters

Oysters Rockefeller

  • 12 oysters, shucked
  • 225g/8oz spinach, washed, cooked and chopped
  • 5 tbsp crem fraiche
  • 1/2 tsp Pernod
  • 1 tsp Worcestershire sauce
  • 4 tbsp Parmesan cheese
