Ingredients
1 head of yellow croaker, about 600g
450g Chiuchow preserved mustard
4 preserved plums
1 red pepper
75g ginger
8 cloves garlic
2 green onion
Seasoning
1/2 tsp Salt
2 tsp sugar
1 tbsp Shao Xiang wine
Method
Clean the fish; roughly shred the preserved mustard, wash and soak in water.
Wash the red pepper; roughly shred the ginger; cut the green onion into 1" lengths; peel the garlic; mash the preserved plums.
Shallow-fry the fish with oil until it is crispy and fragrant.
Saute the garlic, red pepper, ginger and green onion, add the preserved mustard and stir-fry until fragrant. Put the fish and preserved mustard into a clay pot, add some water and let it boil, then turn the heat down and cook for about 40 minutes. Finally, add the seasonings to serve.
