梅子豉汁蒸鱷魚腩
Ingredients
- 450g alligator meat
- 20g preserved black beans
- 8 cloves garlic
- 4 preserved plums
- 1 red pepper
Seasoning
- 450g alligator meat

- 2 tsp sugar
- 2 tsp salt
- 4 tsp corn flour
- 1 tsp Shao Xiang wine
- 1/2 tsp pepper
Method
- Defrost the alligator meat and chop it into small pieces, then rinse it under strong, running water for 30 minutes, pat dry. Wash the preserved black beans; mince the garlic; shred the red pepper; mash the preserved plums.
- Saute half of the minced garlic, then add the black beans and the red pepper to cook until fragrant, set aside. When it is cooled, add in the plums, the remaining garlic and all the seasonings.
- Stir the mixture into the alligator and mix well with your hands, make sure the corn flour has penetrated the alligator. Let stand for 30 minutes, mix it well agsin before steaming.
- Steam the dish for about 30 minutes. Serve hot.
